Australia Day ANZAC Biscuits



 
ANZAC biscuits are special Australian and New Zealander treats, and hence the perfect thing to make for Australia Day on 26 January. The name ANZAC (Australia and New Zealand Army Corps) arose because they were the biscuit of choice for wives to send to ANZAC soldiers in WWI. As the recipe (which almost never varies) contains no egg, they kept well for long periods while being transported overseas. ANZACs are super delicious, no fail biscuits.

Cooking spray
1 cup plain flour
1 cup sugar
1 cup rolled oats
1 cup coconut
115g butter
1 tbsp golden syrup
2 tbsp boiling water
1 tsp bicarbonate soda
 
1. Grease biscuit trays with cooking spray and preheat oven to 180 degrees Celsius.
2. Combine dry ingredients.
3. Melt together butter and golden syrup. Combine water and bicarbonate soda, and add to butter mixture.
4. Mix butter mixture and dry ingredients. Add a dash more boiling water if too dry.
5. Roll mixture into teaspoon sized balls and place on tray, allowing room for spreading. Push each down gently with fingers.
6. Bake for 10 to 12 minutes or until golden. Allow to cool on tray for a few minutes before transferring to cooling racks.
